Materials on which yeast can feed and grow including sugars, proteins, and mineral salts.
Note :
Yeast must have suitable foods in dilute solution if it is to grow, increase, and ferment a liquor or a dough. Sugar (or substances capable of being changed to sugar) and suitable nitrogenous foods are both essential. Sugars are converted by invertase and maltase to invert sugar and glucose respectively. These enter the cells, being absorbed through the cell walls, where zymase, changes them to carbon dioxide, alcohol, etc., the former aerating the dough. The nitrogenous foods are needed for the building up of supplies of protoplasm with which to furnish new yeast cells.
