Éther méthylique non défini de la cellulose; poudre grise, d'aspect fibreux, gonflant dans l'eau, donnant un colloïde; soluble acide acétique glacial; insoluble alcool, éther, chloroforme; stable au moins jusqu'à 225° et inaltéré par la lumière.

Emplois : agent épaississant; émulsifiant; dispersif et adhésif.

A water-soluble cellulose ether made by reacting cellulose with sodium hydroxide and further reacting the alkali cellulose so formed with a compound containing a methyl group, e.g., methyl chloride, or with propylene oxide. The latter process forms the hydroxypropyl derivative.
Note :
The product has molecular weights ranging up to 200,000 and is useful as a thickening agent, protective colloid, and general-purpose food additive. It is strongly hydrophilic and forms stiff colloidal dispersions in water at room temperature.
