Définition :
Thermomètre à cadran doté d'une tige qui comporte un élément bi-métallique et qui, passant à travers la paroi de la bassine, permet de mesurer la température du sirop dans lequel elle est immergée.
Note :
L'usage du thermomètre bi-métallique se répand de plus en plus à cause de sa résistance, de sa facilité d'ajustement et de lecture. Le cadran de l'instrument est placé en dehors de la casserole mais la tige est fichée à travers celle-ci et maintenue à l'intérieur à une distance minimale de 1/4 de pouce du fond.

The degree lines of the dial thermometer, like the target thermometer, refer to the boiling point of water. This thermometer has a bimetallic element in the first 3 or 4 inches of the stem. As the indicator is a needle, the openness of scale is governed by the length of the needle and the accuracy required ((...)) The long straight stem of this thermometer is inserted through the wall of the syrup pan and syrup draw off box so it will be parallel to the bottom of the pan and entirely immersed in the boiling syrup. The dial of the thermometer is on the outside of the evaporator where it is out of the steam and is easy to read.
