Définition :
Vitamine hydrosoluble du groupe B.
Note :
Le blanc de l'œuf renferme une substance (l'avidine), qui inactive la biotine; comme la biotine est indispensable au développement de nombreux types de micro-organismes, ce mécanisme constitue une défense naturelle de l'œuf contre l'infection. La biotine est un composé stable. Les carences en biotine sont rares du fait de sa large distribution dans les végétaux.

Note :
The white of an egg contains a substance (avidin) which inactivates Biotin; since Biotin is essential for the growth of many types of microbe this mechanism is one of the natural defences that the egg has against infection. Biotin is astaple compound and deficiencies are rare since it is widely distributed in vegetable foods.
