The whole series of stages through which the coffee passes from the time it is picked (in the berry) to the time it is ready for consumption (as green coffee).
Note :
Coffee processing in Colombia is usually divided into two phases. During the first, which is carried out on the farms themselves, the berries are depulped in order to obtain the so-called parchment coffee. Subsequently, the coffee is threshed in industrial mills so as to rid the beans of their parchment-like cover and leave them ready for sale to consumer or for export.
