To become defective owing to gas-forming fermentation in cheese, which may be of two kinds: (1) growth of coliform bacteria (Escherichia coli, Aerobacter aerogenes) in poorly drained soft cheeses that have also not been properly soures. Such cheese becomes inedible; (2) growth of spore-forming clostridia in pressed cheeses. Such cheeses may burst.
