Définition :
Procédé qui consiste à chauffer le lait à l'intérieur d'une étuve ou d'un bain-marie pendant 2 ou 3 heures à 40 ‑45 °C afin de permettre le développement des deux ferments lactiques (Streptococcus thermophilus et Lactobacillus bulgaricus) qui ont été préalablement ensemencés dans le lait.
Note :
La phase d'incubation correspond au développement de l'acidité dans le yaourt; elle est sous la dépendance de deux facteurs : la température et la durée.

The process which consists of heating the bottled milk in an incubator or a water bath for 2 or 3 hours at 44°C (110°F) in order to promote the development of the two lactic organisms (Streptococcus thermophilus and Lactobacillus bulgaricus) with which the milk has been previously inoculated.
