As a filter media, D.E. ((diatomaceous earth)) is deposited upon a filter septum usually made of fine stainless steel mesh wire. The small diatoms of infinite configurations form a rigid, but porous filter cake which sieves out the particular matter in beer as it passes through the filter. To prevent blinding and to achieve extended filter runs, D.E. is continuously metered into the unfiltered beer as a "body feed", thereby constantly building up the depth of the filter cake. A filtration run begins by rapidly recirculating a slurry of D.E. precoat through the filter and back to the precoat tank. The precoat filter cake becomes a thin 1.5 mm, protective coating on the filter septum. When the recirculating liquid becomes clear, the precoat has been established and beer filtration is begun. Beer is pumped through the filter while the D.E. is constantly metered in the beer. A normal length of run would be 8 to 12 hours. After this, either the filter cake begins to exceed the physical space limitations or the pressure drop becomes excessive. Filtration is then stopped, the filter cake removed; the filter is cleaned and sterilized as necessary and a precoat preestablished for the next run.
