The first stage in the preparation of starch from maize is to soak the maize in water containing sulphur dioxide for 24 hours. The liquor is termed corn steep liquor. It was found to be an excellent medium for growing mould to produce penicillin; the yield was greatly enhanced beyond that obtained with synthetic media as the liquor contained a "biochemical precursor" of penicillin.
